HEY everybody and welcome back to my blog! Today’s post is of my three meals I ate yesterday. My boyfriend and I LOVE food. Recently we have found out about a 24hr outdoor fruit & vegetable market. I had NO idea this existed. So the other day we bought a ridiculous amount of fruits & vegetables for the week. I had the day off yesterday and decided to use them all up. Ryon and I both work in the same restaurant where I’m a waitress and he is a cook (I’m a very lucky girl!). I always thought I could cook until I met him. Ryon just brings food to a whole different level I didn’t know existed. So far I’ve learned soooo much more about cooking and last night I made him dinner. But first I started my day off right with a huge breakfast! I have been surprised with many breakfast in bed but yesterday Ryon had to work all day so I had no choice but to make my own!
Most mornings I wake up because I’m hungry so I eat breakfast whether it’s on the go or at home. When I start my day off with a healthy breakfast I find it reduces the cravings for unhealthy foods I may have throughout the day. I’m always SO dehydrated in the morning no matter how much water water I drink before bed. So I started with a glass of lemon water. Yesterday was quite cold so I decided that oatmeal was very fitting. I made a creamy coconut oatmeal topped with raspberries, bananas, pecans and dates (which are so underrated). YUM. As I write this I wish I could have it all over again. The oatmeal I used was from a package but I’m currently working on a creamy coconut oatmeal recipe from scratch which I’ll share with you once perfected. I’ll keep you posted! I also had a grapefruit and a cup of green tea. I drink a lot of coffee throughout the day so I always make sure to start my day off with a tea instead because it’s SOSO good for you.
When I think of breakfast I think of fruit, and when I think of lunch I think of vegetables. For lunch yesterday I made a salad with spinach, tomatoes, 2 hard boiled eggs, feta cheese, olives, chia seeds and sunflower seeds. I would usually make a dressing with dijon mustard, olive oil and balsamic vinegar but the salad was ok with out. The olives and feta made it juicy and salty. This is soooo easy to just throw together, hard boiled eggs are easy to make and good to keep in your fridge for a snack or salad.
For dinner I made Ryon his favourite pork chop recipe where the pork chop is dipped in flour, egg and cornflakes. I eat very little meat but yesterday I felt like fish. So I made fish for me and pork chop for Ryon. I made a side of corn on the cob as well as garlic, rosemary, thyme potatoes. For my piece of salmon I placed a sprig of rosemary and sliced lemon on top, wrapped it in parchment paper and placed it in the oven. It was soooooo delicious.
