Energy Bites

Happy Tuesday everyone! I can’t wait to share with you the recipe for these delicious energy bites! Just putting it out there that this recipe is a combination of around 6 energy bite recipes on Pinterest, so, it’s not completely my own.  They are vegan, no-bake, gluten free, and a whole lot of healthy. I am a major lover of orange flavoured chocolate, and if you close your eyes while eating one of these they taste exactly like it. Don’t like orange? I’m sure they would taste great if substituted with another fruit.

Ingredients (to make 5):

  • 1/2 cup of cashews
  • 8-10 dates
  • zest of half an orange
  • 1 1/2 tbsp of fresh orange juice
  • 1 tbsp of cacao powder
  • shredded coconut (optional)

Step 1: Combine everything (except for coconut) in food processor or magic bullet.

Step 2: Once it has come together roll into small balls.

Step 3: Roll in shredded coconut (to hide the ugliness) & refrigerate. ENJOY.
