Creamy Coconut Oatmeal

Hey guys, in my past Meal Diary post I mentioned this coconut oatmeal that I’ve been obsessed with. The only issue I have with it is that it’s processed and from a box. Soooo I’ve decided to recreate this recipe using whole ingredients. Lately I’ve been having a lot of strange dreams and apparently I’ve been dreaming about this oatmeal. My boyfriend told me that I screamed out ‘COCONUT’ while I was asleep haha. So I hope you enjoy this recipe as much as I do!


  • 1 cup of water
  • 1/2 of rolled oats
  • 1tbsp of chia seeds
  • 2tbsps of dehydrated unsweetened coconut
  • 1/2 cup of coconut milk
  • half a banana
  • other fruit to top
  • crushed pecans (optional)
  • sweetener like honey or maple syrup (optional)

Step 1:

Bring water to a boil


Step 2:

Add oats to boiling water and turn heat down to medium .Stir occasionally for 10-15 min.


Step 3:

Chop up fruit.


Step 4:

Once oatmeal is ready turn heat off and add the chia seeds and coconut while the pot is still on the burner. Stir for 4 min. Take pot off the heat and stir in coconut milk. Let sit for 4 min (it gets extra gooey!).

Step 5:

Add toppings and enjoy 🙂
